Farmer's Market Pasta

The cheese mixture

ricotta cheese or cottage cheese

parmesan cheese, freshly grated

thinly sliced fresh mozzarella
The seasoning

Instructions
- Cook the peas and drain them, setting aside.
- Cook the pasta until al dente, then drain and toss with peas and butter.
- In a food processor, combine ricotta, garlic, and olive oil until smooth, then season with salt and pepper.
- Stir in the grated cheeses and basil into the cheese mixture.
- Add the cheese mixture to the pasta and stir in the reserved pasta water until smooth.
- Divide the mixture into ramekins and top each with a slice of mozzarella.
- Broil the ramekins at 400 degrees Fahrenheit or higher for about 5 minutes until the cheese has melted.
