Farmer's Market Pasta

Ingredients

The pasta

  • 2 cups dry pasta (whole wheat shells)
  • 1 cup peas
  • ¼ cup reserved pasta water
  • ½ tablespoon butter

The cheese mixture

  • ¾ cup ricotta cheese or cottage cheese
  • cup parmesan cheese, freshly grated
  • cup mozzarella cheese, freshly grated
  • 4 pieces thinly sliced fresh mozzarella

The seasoning

  • 3 cloves garlic
  • 1 teaspoon olive oil
  • to taste salt and pepper
  • to taste fresh torn basil

Instructions

  1. Cook the peas and drain them, setting aside.
  2. Cook the pasta until al dente, then drain and toss with peas and butter.
  3. In a food processor, combine ricotta, garlic, and olive oil until smooth, then season with salt and pepper.
  4. Stir in the grated cheeses and basil into the cheese mixture.
  5. Add the cheese mixture to the pasta and stir in the reserved pasta water until smooth.
  6. Divide the mixture into ramekins and top each with a slice of mozzarella.
  7. Broil the ramekins at 400 degrees Fahrenheit or higher for about 5 minutes until the cheese has melted.
