One Pot Puerto Rican Rice

Ingredients

  • 1 pound ground pork sausage
  • 1 medium onion, diced
  • 1 cup long-grain white rice, rinsed
  • 2 cups water
  • ¼ cup sliced pepperoncini peppers
  • ¼ cup pepperoncini juice
  • 4 packets Goya Sazon Cilantro-Achiote Seasoning
  • 1 can (11 ounces) Green Giant Mexicorn, drained
  • 1 cup fresh cilantro, minced

Instructions

  1. 1. Preheat the oven to 350°F and adjust the oven rack to the center position.
  2. 2. In a Dutch oven or large oven-safe pot, cook the sausage and onion over medium-high heat until the onion is softened and the sausage is almost cooked through, about 5 minutes.
  3. 3. Remove the pork and onion from the pot, reserving the fat.
  4. 4. Add the rice to the reserved fat and sauté, stirring frequently until the rice is golden, about 10 minutes.
  5. 5. Return the pork and onion to the pot, then add water, pepperoncini, pepperoncini juice, Goya seasoning, and corn. Bring to a boil.
  6. 6. Cover the pot and bake in the oven for 30 minutes, stirring halfway through.
  7. 7. Remove from the oven, fluff the rice with a fork, and stir in the chopped cilantro before serving.
