One Pot Puerto Rican Rice

Green Giant Mexicorn, drained

Instructions
- 1. Preheat the oven to 350°F and adjust the oven rack to the center position.
- 2. In a Dutch oven or large oven-safe pot, cook the sausage and onion over medium-high heat until the onion is softened and the sausage is almost cooked through, about 5 minutes.
- 3. Remove the pork and onion from the pot, reserving the fat.
- 4. Add the rice to the reserved fat and sauté, stirring frequently until the rice is golden, about 10 minutes.
- 5. Return the pork and onion to the pot, then add water, pepperoncini, pepperoncini juice, Goya seasoning, and corn. Bring to a boil.
- 6. Cover the pot and bake in the oven for 30 minutes, stirring halfway through.
- 7. Remove from the oven, fluff the rice with a fork, and stir in the chopped cilantro before serving.
