Ingredients

The stir fry

  • 1 pound boneless skinless chicken breasts
  • 2 medium zucchini
  • 1 large red or yellow onion
  • 2 tablespoons extra virgin olive oil
  • optional sesame seeds for garnish
  • optional chopped green onion for garnish

The sauce

  • 4 tablespoons low sodium soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons granulated sugar
  • 1 tablespoon minced fresh ginger
  • 3 cloves minced garlic
  • 2 tablespoons water
  • 1 teaspoon cornstarch
  • ¼ teaspoon red pepper flakes

Instructions

  1. Marinate the chicken with soy sauce, apple cider vinegar, and sugar while preparing other ingredients.
  2. Mix the remaining sauce ingredients in a separate bowl.
  3. Prepare the zucchini and onion by slicing them appropriately.
  4. Heat olive oil in a skillet and cook the chicken until golden brown and cooked through, then set aside.
  5. Sauté the onion in the skillet until tender and beginning to brown.
  6. Add the sauce to the skillet and let it cook briefly before adding zucchini.
  7. Cook until the zucchini is just softened, then return the chicken to the skillet.
  8. Serve hot, garnished with sesame seeds and green onion if desired.
