Ingredients

The salad

  • 3 pounds fingerling potatoes
  • 4 pieces scallions (diced, white part only)
  • 1 stalk celery (diced)

The dressing

  • ¼ cup organic mayonnaise
  • 2 teaspoons red wine vinegar
  • to taste salt
  • to taste pepper
  • ¼ teaspoon celery seed (optional)
  • to garnish fresh chives

Instructions

  1. Chop the potatoes into ½ inch pieces and steam them until tender, about 10 minutes.
  2. Chop the scallions and celery, and place them in a large bowl.
  3. Add the cooked potatoes to the bowl and stir gently with the vegetables.
  4. Mix together the mayonnaise and red wine vinegar.
  5. Pour the dressing over the warm potatoes.
  6. Add salt and pepper to taste and garnish with fresh chives.
  7. Serve warm or cold.
