Vegetarian Eggs Benedict

Ingredients

The base

  • 4 eggs poached or fried
  • 8 ounces broccolini
  • 2 pieces English muffins
  • 1 piece meyer lemon
  • to taste olive oil
  • to taste salt
  • to taste pepper

Meyer Lemon Hollandaise Sauce

  • 4 egg yolks
  • ½ cup butter, melted
  • tablespoons meyer lemon juice (or regular lemon juice)
  • a pinch salt
  • a pinch pepper
  • a pinch cayenne

Optional Garnishes

  • to taste flaky sea salt
  • to taste pepper
  • to taste chili threads (or chili flakes, or Aleppo chili pepper)
  • to taste lemon zest
  • to taste fresh chopped Italian parsley

Instructions

  1. Steam or roast the broccolini until fork tender.
  2. Make the Meyer Lemon Hollandaise Sauce by whisking the egg yolks and lemon juice until thickened, then place over simmering water and whisk in melted butter until thickened.
  3. Poach or fry the eggs.
  4. Toast the English muffins.
  5. Assemble by placing the English muffin, then broccolini, seasoned with salt, topped with the egg, and spooning hollandaise over top.
  6. Garnish with optional toppings and serve immediately.
