Instructions
- Steam or roast the broccolini until fork tender.
- Make the Meyer Lemon Hollandaise Sauce by whisking the egg yolks and lemon juice until thickened, then place over simmering water and whisk in melted butter until thickened.
- Poach or fry the eggs.
- Toast the English muffins.
- Assemble by placing the English muffin, then broccolini, seasoned with salt, topped with the egg, and spooning hollandaise over top.
- Garnish with optional toppings and serve immediately.
