Instructions
- Preheat a non-stick griddle over medium heat.
- In a small bowl, whisk together oat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
- In a large bowl, combine buttermilk, milk, eggs, and melted butter.
- Stir in the dry ingredients until slightly lumpy.
- Pour ¼ cup of the mixture onto the preheated griddle and add 10-12 blueberries on top.
- Flip the pancake when bubbles appear and the bottom is golden, then cook until the other side is golden.
- Repeat with the remaining batter.
- Serve warm with syrup or whipped cream.
- To make the syrup, melt butter in a saucepan, stir in sugar and buttermilk, and cook until boiling.
- Remove from heat, stir in baking soda and vanilla, and whisk until foamy.
- Serve the syrup warm.
