Blueberry Buttermilk Oat Flour Pancakes

Ingredients

The pancakes

  • 1 ¼ cups oat flour
  • 1 ¼ cups all-purpose flour
  • 2 Tbsp sugar
  • 2 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups buttermilk
  • cup milk
  • 2 eggs eggs
  • 3 Tbsp butter, melted
  • 1 ½ cups blueberries

Buttermilk Syrup

  • ½ cup salted butter
  • 1 cup granulated sugar
  • ½ cup low-fat buttermilk
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Instructions

  1. Preheat a non-stick griddle over medium heat.
  2. In a small bowl, whisk together oat flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In a large bowl, combine buttermilk, milk, eggs, and melted butter.
  4. Stir in the dry ingredients until slightly lumpy.
  5. Pour ¼ cup of the mixture onto the preheated griddle and add 10-12 blueberries on top.
  6. Flip the pancake when bubbles appear and the bottom is golden, then cook until the other side is golden.
  7. Repeat with the remaining batter.
  8. Serve warm with syrup or whipped cream.
  9. To make the syrup, melt butter in a saucepan, stir in sugar and buttermilk, and cook until boiling.
  10. Remove from heat, stir in baking soda and vanilla, and whisk until foamy.
  11. Serve the syrup warm.
