Ingredients

The scones

  • 2 cups gluten-free flour
  • cup cane sugar
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 6 tablespoons cold butter
  • ½ cup canned pumpkin puree
  • 1 large egg
  • 1 ½ teaspoons pure vanilla extract

The glaze

  • cup powdered sugar
  • 1 ½ – 2 teaspoons half-and-half or milk
  • ½ teaspoon pure vanilla extract

Optional toppings

  • to taste chopped pecans
  • to taste ground cinnamon or pumpkin pie spice

Instructions

  1. Preheat the oven to 400℉ and prepare a baking sheet.
  2. Mix flour, sugar, baking powder, and pumpkin pie spice in a bowl.
  3. Cut in cold butter until the mixture resembles coarse sand.
  4. Add pumpkin puree, egg, and vanilla, mixing until a soft dough forms.
  5. Flatten the dough into a 7-inch round disc and cut into 8 pieces.
  6. Transfer the pieces to the baking sheet and bake for 8-10 minutes.
  7. Cool the scones on a wire rack before glazing.
  8. Combine glaze ingredients and drizzle over the cooled scones.
