Skillet Spanish Quinoa

Instructions
- Rinse and soak quinoa in warm water for about 10 minutes.
- In a large skillet over medium-high heat, drizzle olive oil and sauté onion and garlic until fragrant.
- Add green bell pepper, vegetable broth, diced tomatoes, hot sauce, and seasonings, then stir in drained quinoa.
- Bring the mixture to a boil, then cover and reduce heat to a simmer.
- Cook for about 20 minutes, or until the broth is absorbed.
- Turn off the heat and let quinoa sit for an additional 5 minutes, then fluff with a fork.
- Top with cilantro, serve, and enjoy!
