Skillet Spanish Quinoa

Ingredients

  • 1 cup uncooked quinoa
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup vegetable broth
  • 1 15 oz can petite diced tomatoes
  • ½ – 1 tsp hot sauce, to your liking
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp oregano
  • ¼ tsp salt
  • a pinch pepper
  • 1 Tbsp cilantro, roughly chopped

Instructions

  1. Rinse and soak quinoa in warm water for about 10 minutes.
  2. In a large skillet over medium-high heat, drizzle olive oil and sauté onion and garlic until fragrant.
  3. Add green bell pepper, vegetable broth, diced tomatoes, hot sauce, and seasonings, then stir in drained quinoa.
  4. Bring the mixture to a boil, then cover and reduce heat to a simmer.
  5. Cook for about 20 minutes, or until the broth is absorbed.
  6. Turn off the heat and let quinoa sit for an additional 5 minutes, then fluff with a fork.
  7. Top with cilantro, serve, and enjoy!
