Ingredients

The stir fry

  • 3 pieces chicken breasts
  • 1 piece red bell pepper, thinly sliced
  • 1 piece yellow bell pepper, thinly sliced
  • 1 stick celery, chopped
  • 3 pieces skinned carrots
  • ½ piece white onion, diced
  • 20 pieces edamame

The sauce

  • 2 Tbsp light soy sauce
  • 3 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 dash salt and pepper
  • 1 pinch red pepper flakes

Instructions

  1. Chop all vegetables except for the edamame and cut the chicken breasts into pieces, seasoning with salt and pepper.
  2. Heat a skillet on medium heat and add olive oil.
  3. Sauté the vegetables in the skillet for about 3 minutes.
  4. Add the chicken, soy sauce, lemon juice, and red pepper flakes to the skillet.
  5. Cook for about 15 minutes or until the chicken is fully cooked.
