Ingredients

The pasta and filling

  • 30 pieces jumbo pasta shells
  • 15 oz fresh spinach
  • 15 oz ricotta cheese
  • 1 large egg
  • 3 Tbsp chopped fresh basil
  • 1 tsp chopped fresh oregano or thyme
  • 1 clove garlic
  • 3 cups mozzarella cheese
  • 1 cup parmesan cheese
  • to taste salt and pepper
  • optional red pepper flakes

The sauce

  • 3 cups marinara sauce

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a mixing bowl, blend ricotta cheese and egg with a fork.
  3. Stir in basil, oregano or thyme, and garlic.
  4. Add 2 cups of mozzarella and parmesan cheese, and mix in the prepared spinach.
  5. Season the mixture with salt and pepper to taste.
  6. Spread 1/3 cup of marinara sauce in the bottom of a baking dish.
  7. Stuff each cooked pasta shell with about 2 tablespoons of the cheese mixture.
  8. Align the stuffed shells in the baking dish with openings facing upright.
  9. If desired, stir red pepper flakes into the remaining marinara sauce.
  10. Cover the shells with the remaining marinara sauce and sprinkle with the remaining mozzarella cheese.
  11. Cover the baking dish with aluminum foil and bake for 30 minutes.
  12. Serve warm.
