Ingredients

  • 1 teaspoon olive oil
  • ½ cup chopped onions
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • 3 cloves garlic (minced)
  • 4 cups broth
  • 28 oz canned crushed tomatoes
  • ¼-½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • 2 teaspoons sweetener

Instructions

  1. 1. Set the Instant Pot to the Saute function and heat the olive oil.
  2. 2. Add chopped onions, celery, and carrots, and cook until the onions are translucent.
  3. 3. Stir in the minced garlic.
  4. 4. Add the broth, crushed tomatoes, salt, pepper, Italian seasoning, dried basil, and sweetener; stir well.
  5. 5. Seal the lid and cook on Manual High Pressure for 15 minutes.
  6. 6. Allow the steam to release naturally for 10 minutes before opening the lid.
  7. 7. Blend the soup using an immersion blender until creamy.
