Instructions
- 1. Set the Instant Pot to the Saute function and heat the olive oil.
- 2. Add chopped onions, celery, and carrots, and cook until the onions are translucent.
- 3. Stir in the minced garlic.
- 4. Add the broth, crushed tomatoes, salt, pepper, Italian seasoning, dried basil, and sweetener; stir well.
- 5. Seal the lid and cook on Manual High Pressure for 15 minutes.
- 6. Allow the steam to release naturally for 10 minutes before opening the lid.
- 7. Blend the soup using an immersion blender until creamy.
