Easy Kale, Sausage and White Bean Soup

Ingredients

  • 1 tablespoon olive oil
  • ½ onion peeled and diced
  • 2 cloves garlic, minced
  • 1 pound Italian sausage, cut into chunks
  • 6 cups chicken broth
  • 1 bunch kale
  • 2 cans white beans, drained and rinsed
  • 1 teaspoon salt
  • to taste pepper

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add diced onion and minced garlic, cooking for 2 to 3 minutes.
  3. Add sausage pieces and cook until no longer pink, about 5 to 10 minutes.
  4. Strip stems from kale and shred the leaves.
  5. Add chicken broth, shredded kale, white beans, salt, and pepper to the pot.
  6. Bring to a boil, then reduce heat to a simmer and cook for 5 to 10 minutes.
  7. Serve warm and enjoy.
