Instructions
- Coat the chicken in cornstarch, salt, and pepper.
- Heat vegetable oil in a pan and cook the chicken in batches until browned.
- Remove the chicken and drain excess oil, leaving 1 teaspoon in the pan.
- Add garlic and ginger to the pan and cook briefly.
- Whisk together the sauce ingredients and pour into the pan, bringing it to a simmer.
- Combine cornstarch with cold water, then add to the sauce and boil until thickened.
- Return the chicken and cashews to the pan, tossing to coat in the sauce.
- Garnish with green onions and serve.
