Ingredients

The chicken

  • 1 ¼ pounds boneless skinless chicken breasts, cut into 1 inch cubes
  • ¼ cup cornstarch
  • to taste salt and pepper
  • ¼ cup vegetable oil

The sauce

  • 1 teaspoon minced ginger
  • 1 ½ teaspoons minced garlic
  • ½ cup chicken broth
  • ¼ cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • ¼ cup ketchup
  • 2 tablespoons sweet chili sauce
  • 2 teaspoons brown sugar

The garnish

  • ½ cup roasted cashews
  • 3 tablespoons sliced green onions

Instructions

  1. Coat the chicken in cornstarch, salt, and pepper.
  2. Heat vegetable oil in a pan and cook the chicken in batches until browned.
  3. Remove the chicken and drain excess oil, leaving 1 teaspoon in the pan.
  4. Add garlic and ginger to the pan and cook briefly.
  5. Whisk together the sauce ingredients and pour into the pan, bringing it to a simmer.
  6. Combine cornstarch with cold water, then add to the sauce and boil until thickened.
  7. Return the chicken and cashews to the pan, tossing to coat in the sauce.
  8. Garnish with green onions and serve.
