Instructions
- Soak the lobster meat in milk while preparing the soup.
- Melt the butter in a medium saucepan.
- Add diced celery, carrots, and onion; sauté for 3-4 minutes.
- Stir in the flour and cook for about 5 minutes without browning.
- Whisk in the stock until fully incorporated.
- Remove the lobster meat from the milk and set aside.
- Add milk to the soup and mix well.
- Add potatoes and simmer for about 30 minutes until softened.
- Add fresh thyme, sea salt, and pepper to taste.
- Add the lobster and simmer for an additional 7-10 minutes.
- Serve and enjoy!
