Ingredients

  • 10 ounces lobster claw and body meat
  • ½ cup unsalted butter
  • ½ cup all purpose flour
  • 2 cups diced potatoes
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cups chicken stock
  • 2 cups milk
  • 1 teaspoon fresh thyme
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Soak the lobster meat in milk while preparing the soup.
  2. Melt the butter in a medium saucepan.
  3. Add diced celery, carrots, and onion; sauté for 3-4 minutes.
  4. Stir in the flour and cook for about 5 minutes without browning.
  5. Whisk in the stock until fully incorporated.
  6. Remove the lobster meat from the milk and set aside.
  7. Add milk to the soup and mix well.
  8. Add potatoes and simmer for about 30 minutes until softened.
  9. Add fresh thyme, sea salt, and pepper to taste.
  10. Add the lobster and simmer for an additional 7-10 minutes.
  11. Serve and enjoy!
