The Chile Verde Sauce

Instructions
- Remove pork chops from the refrigerator and let them come to room temperature for at least 20 minutes.
- Mix the seasoning ingredients and rub them onto the pork chops with oil.
- Heat a large pan over medium heat and add oil, then cook the pork chops for 3 minutes on each side.
- Remove the pork chops and keep them warm under foil.
- In the same pan, sauté the onion and garlic until translucent, adding water if necessary.
- Add the chicken base and salsa verde (or green chiles) to the pan, scraping up any browned bits.
- Simmer the sauce until thickened, then adjust seasoning as needed.
- Serve the pork chops topped with the chile verde sauce and garnish with cilantro and Cotija cheese.
