Ingredients

The dough

  • 1 and 1/4 cups milk, warmed
  • 2 teaspoons instant or active dry yeast
  • 3 Tablespoons honey
  • 2 Tablespoons unsalted butter, melted
  • 1 large egg
  • 1 and 1/2 teaspoons salt
  • 1 cup whole wheat flour
  • 2 cups + 3 Tablespoons bread flour or all-purpose flour

For handling

  • ½ cup cornmeal or semolina flour

Instructions

  1. Prepare the dough by mixing warm milk, yeast, and honey in a bowl and letting it sit until foamy.
  2. Add melted butter, egg, salt, whole wheat flour, and some of the bread flour, then mix until combined.
  3. Let the dough rise covered at room temperature until doubled in size, about 2 hours, then refrigerate for at least 6 hours.
  4. Shape the cold dough into discs and place them on a lined baking sheet, letting them rest for 20 minutes.
  5. Heat a griddle or skillet and cook the muffins for 7-8 minutes on each side until golden brown.
  6. Preheat the oven and bake the muffins for 8-11 minutes until they reach an internal temperature of 200°F (93°C).
  7. Cool the muffins for 10 minutes before slicing and serving.
