Chocolate Creme Brulee
Ingredients
The custard

dark chocolate, chopped

The sugar topping

superfine sugar, divided
Instructions
- Preheat the oven to 150C/300F.
- Melt the chocolate with the heavy cream in a saucepan over low heat, stirring until smooth.
- Whisk together the egg yolks and 1/3 cup of superfine sugar until smooth, then mix in the chocolate mixture and strain it.
- Pour the mixture into ramekins placed in a deep baking dish, adding boiling water halfway up the sides of the ramekins.
- Bake for 35-40 minutes until the centers are just set, then cool to room temperature and refrigerate for at least 6 hours.
- Before serving, sprinkle half a tablespoon of superfine sugar on each ramekin and scorch the tops with a kitchen torch.
