Instructions
- Pound the chicken cutlets between plastic wrap until about ¼ inch thick.
- If any chicken breasts are thicker than half an inch, split them in half.
- Mix flour, salt, and pepper in a shallow bowl.
- In another bowl, whisk eggs with milk or water.
- In a third bowl, combine panko breadcrumbs, Romano cheese, garlic powder, onion powder, black pepper, parsley, and lemon zest.
- Coat chicken in seasoned flour, then dip in egg wash, and finally coat with breadcrumb mixture.
- Heat vegetable oil in a large frying pan over medium-high heat.
- Fry the breaded chicken cutlets for about 3 minutes on each side until golden brown and cooked through.
- Remove from the pan and drain on a wire rack.
