Ingredients

The chicken

  • 1 lb boneless skinless chicken breast

The breading station

  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ¼ cup milk or water
  • 1 cup panko breadcrumbs
  • ¼ cup Romano or Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • teaspoon black pepper
  • 2 tablespoons Italian parsley
  • 1 teaspoon lemon zest

For cooking

  • ½ cup vegetable oil

Instructions

  1. Pound the chicken cutlets between plastic wrap until about ¼ inch thick.
  2. If any chicken breasts are thicker than half an inch, split them in half.
  3. Mix flour, salt, and pepper in a shallow bowl.
  4. In another bowl, whisk eggs with milk or water.
  5. In a third bowl, combine panko breadcrumbs, Romano cheese, garlic powder, onion powder, black pepper, parsley, and lemon zest.
  6. Coat chicken in seasoned flour, then dip in egg wash, and finally coat with breadcrumb mixture.
  7. Heat vegetable oil in a large frying pan over medium-high heat.
  8. Fry the breaded chicken cutlets for about 3 minutes on each side until golden brown and cooked through.
  9. Remove from the pan and drain on a wire rack.
