Easy Carrot Soup

Instructions
- 1. Sauté the onion in olive oil until translucent.
- 2. Add the carrots and potato, cover, and cook over medium low heat until they begin to soften.
- 3. Add the broth and orange juice, and season with salt.
- 4. Simmer gently for about 40 minutes until the vegetables are very tender.
- 5. Puree the soup with an immersion blender and serve warm.
