One Pan Roasted Mediterranean Cod

Ingredients

  • 3 Tbsp grass-fed butter or ghee, melted
  • 24 oz sustainably-caught cod fillets, patted dry
  • 16 oz asparagus, ends removed
  • 1 cup kalamata olives, drained
  • 3 Tbsp capers, drained
  • 3 cloves garlic, thinly sliced lengthwise
  • 6 oz cherry tomatoes, halved
  • 2 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 2 lemons for topping and zesting

Instructions

  1. Preheat the oven to 450ºF (232ºC).
  2. Cover a sheet pan with parchment paper and brush it lightly with melted butter or ghee.
  3. Ensure the cod fillets are dry and remove any visible bones.
  4. Place the cod fillets on the pan and fill the rest of the pan with asparagus, olives, capers, garlic, and tomatoes.
  5. Brush the remaining melted butter onto the fillets and vegetables.
  6. Sprinkle everything with salt and pepper.
  7. Slice one lemon into rings and place a slice on each cod fillet.
  8. Roast in the oven for 10-12 minutes until the cod is opaque and flakes easily.
  9. Zest the remaining lemon over the dish before serving.
