One Pan Roasted Mediterranean Cod

Instructions
- Preheat the oven to 450ºF (232ºC).
- Cover a sheet pan with parchment paper and brush it lightly with melted butter or ghee.
- Ensure the cod fillets are dry and remove any visible bones.
- Place the cod fillets on the pan and fill the rest of the pan with asparagus, olives, capers, garlic, and tomatoes.
- Brush the remaining melted butter onto the fillets and vegetables.
- Sprinkle everything with salt and pepper.
- Slice one lemon into rings and place a slice on each cod fillet.
- Roast in the oven for 10-12 minutes until the cod is opaque and flakes easily.
- Zest the remaining lemon over the dish before serving.
