Ingredients

  • 1 cup chickpea flour

  • ¾ teaspoon sea salt
  • ¾ cup finely grated carrots
  • ½ cup raisins
  • ½ cup water

Instructions

  1. Mix the chickpea flour, coconut sugar, baking powder, cinnamon, ginger, and salt in a bowl.
  2. Add the grated carrots, raisins, and water, then mix until combined and let the batter thicken.
  3. Heat a pan over low-medium heat and grease it well.
  4. Cook the pancakes two at a time, flipping them when bubbles form, and cook until golden brown.
  5. Repeat until all batter is used, adjusting the heat as necessary.
  6. Serve with your choice of toppings.
