Quick Thai Green Curry Beef and Veggies

Instructions
- Cook the ground beef until browned, then remove and set aside.
- Drain excess fat from the pan and add oil, garlic, and green curry paste, stirring over medium heat.
- Return the beef to the pan and mix, cooking for 2-3 minutes.
- Add lime juice, optional sweet Thai chili sauce, and coconut milk, adjusting the amount for desired spice level.
- Add sliced lemongrass and season with salt and pepper.
- Simmer for 5 minutes.
- Add halved baby bok choy and shaved carrot on top of the beef mixture.
- Pour vegetable broth over the top, cover, and simmer for another 4-5 minutes until veggies are steamed.
- Add sliced thai red pepper, adjusting for spice preference.
- Serve in bowls, spooning extra broth on top and garnishing with green onions and cilantro.
