Quick Thai Green Curry Beef and Veggies

Ingredients

  • 1 lb lean ground beef
  • 2 tbsp sesame or grapeseed oil
  • ½ tsp minced garlic
  • to taste salt/pepper
  • ⅓ to ½ c green curry paste
  • ½ of a lime juiced
  • ½ to ⅔ cup coconut milk
  • 2 sticks lemongrass
  • 4 pieces baby bok choy
  • 1 large carrot
  • cup vegetable broth
  • 1 piece birds eye thai red pepper
  • 1–2 green onions
  • ½ small bunch fresh cilantro
  • 2 tbsp sweet Thai chili sauce (optional)
  • to garnish sesame seeds (optional)

Instructions

  1. Cook the ground beef until browned, then remove and set aside.
  2. Drain excess fat from the pan and add oil, garlic, and green curry paste, stirring over medium heat.
  3. Return the beef to the pan and mix, cooking for 2-3 minutes.
  4. Add lime juice, optional sweet Thai chili sauce, and coconut milk, adjusting the amount for desired spice level.
  5. Add sliced lemongrass and season with salt and pepper.
  6. Simmer for 5 minutes.
  7. Add halved baby bok choy and shaved carrot on top of the beef mixture.
  8. Pour vegetable broth over the top, cover, and simmer for another 4-5 minutes until veggies are steamed.
  9. Add sliced thai red pepper, adjusting for spice preference.
  10. Serve in bowls, spooning extra broth on top and garnishing with green onions and cilantro.
