Ingredients

  • 2 ¼ cups gluten-free flour
  • cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 pieces eggs
  • cup maple syrup
  • cup applesauce
  • ½ cup melted coconut oil
  • 2 cups grated zucchini
  • 1 ½ cups chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch baking pan.
  2. Sift the flour, cocoa powder, baking soda, and salt into a small bowl.
  3. In a large bowl, mix together the eggs, maple syrup, applesauce, and coconut oil. Stir in the grated zucchini.
  4. Add the dry ingredients to the large bowl and stir to combine.
  5. Stir ¾ cup of chocolate chips into the batter.
  6. Transfer the batter to the baking pan and sprinkle the remaining ¾ cup of chocolate chips on top.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
