Instructions
- In a small saucepan, combine milk and sprinkle gelatin on top; let it sit for 5 minutes.
- Heat the gelatin mixture over medium-low heat, stirring until dissolved, about 5 minutes, then cool to room temperature.
- In a large bowl, whisk together the gelatin mixture and both boxes of pudding mix until smooth.
- In another bowl, whisk together pumpkin purée and pumpkin pie spice.
- Fold the pumpkin mixture into the gelatin mixture until well combined, then pour into the graham cracker crust.
- Smooth the top and chill for at least 4 hours or overnight until firm.
- Serve with whipped cream if desired.
