Ingredients

The filling

  • 1 cup milk
  • 1 packet unflavored gelatin
  • 2 boxes instant vanilla pudding mix
  • 1 can pumpkin purée
  • teaspoons pumpkin pie spice

The crust

  • 1 9-inch graham cracker crust

For serving

  • Whipped cream (optional)

Instructions

  1. In a small saucepan, combine milk and sprinkle gelatin on top; let it sit for 5 minutes.
  2. Heat the gelatin mixture over medium-low heat, stirring until dissolved, about 5 minutes, then cool to room temperature.
  3. In a large bowl, whisk together the gelatin mixture and both boxes of pudding mix until smooth.
  4. In another bowl, whisk together pumpkin purée and pumpkin pie spice.
  5. Fold the pumpkin mixture into the gelatin mixture until well combined, then pour into the graham cracker crust.
  6. Smooth the top and chill for at least 4 hours or overnight until firm.
  7. Serve with whipped cream if desired.
