Vegan Stuffed Shells

vegan ricotta cheese

shredded vegan Parmesan

Instructions
- Preheat the oven to 375°F and grease a baking dish.
- Cook the pasta shells according to package instructions until al dente, then drain and rinse.
- Spread 1 cup of marinara sauce in the bottom of the baking dish.
- Sauté garlic and spinach in olive oil until wilted.
- Remove from heat and mix in vegan ricotta, half of the Parmesan, salt, and nutmeg.
- Stuff each shell with the ricotta mixture and place them in the baking dish.
- Pour the remaining marinara sauce on top and sprinkle with the remaining Parmesan.
- Cover and bake for 25 minutes, then uncover and bake for an additional 10 to 15 minutes until golden and bubbling.
- Cool for 5 minutes before serving.
