Vegan Stuffed Shells

Ingredients

The pasta

  • 8 oz pasta shells

The sauce

  • 25 oz marinara sauce
  • 1 tbsp olive oil

The filling

  • 3 cloves garlic, minced
  • 5 oz baby spinach
  • 2 cups vegan ricotta cheese
  • 1 cup shredded vegan Parmesan
  • ½ tsp kosher salt
  • a pinch nutmeg

Instructions

  1. Preheat the oven to 375°F and grease a baking dish.
  2. Cook the pasta shells according to package instructions until al dente, then drain and rinse.
  3. Spread 1 cup of marinara sauce in the bottom of the baking dish.
  4. Sauté garlic and spinach in olive oil until wilted.
  5. Remove from heat and mix in vegan ricotta, half of the Parmesan, salt, and nutmeg.
  6. Stuff each shell with the ricotta mixture and place them in the baking dish.
  7. Pour the remaining marinara sauce on top and sprinkle with the remaining Parmesan.
  8. Cover and bake for 25 minutes, then uncover and bake for an additional 10 to 15 minutes until golden and bubbling.
  9. Cool for 5 minutes before serving.
