Chicken Katsu

Ingredients

The chicken

  • 1 piece Chicken breast
  • 2 tbsp Shio Koji
  • ½ tsp Garlic powder

The batter

  • 4 tbsp Plain flour
  • 1 large Egg
  • 1 tbsp Mayonnaise
  • ¼ cup Water

The coating

  • 2 cups Panko crumb

For frying

  • 750 ml Oil for deep frying

To serve

  • 2 cups Green salad leaves
  • ¼ piece Lemon, sliced

Instructions

  1. Trim and slice the chicken breast to half its thickness.
  2. Marinate the chicken in a zip lock bag with shio koji and garlic powder for 30 minutes.
  3. Remove the marinade from the chicken.
  4. Prepare the batter by mixing egg, water, and mayonnaise in a bowl, then add flour and combine.
  5. Dip the chicken in the batter and coat it with panko crumbs.
  6. Heat oil in a frying pan and check the temperature with a piece of panko.
  7. Deep fry the chicken for about 2 minutes on each side until cooked.
  8. Slice the chicken into 2 cm wide pieces and serve with salad leaves and lemon.
