Ingredients

Stew Ingredients

  • 3 teaspoon canola oil
  • 2 lbs boneless skinless chicken breasts
  • 1 medium onion
  • 2 medium carrots
  • 2 medium leeks
  • 3 tablespoon white whole wheat flour
  • ¼ cup dry white wine
  • 4 cups fat free reduced sodium chicken broth
  • ¼ cup skim milk
  • 3 springs fresh thyme
  • 1 leaf bay leaf
  • 1-2 tablespoons fresh tarragon leaves
  • to taste salt
  • to taste black pepper

Dumpling Ingredients

  • 1 cup white whole wheat flour
  • 1 cup all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup skim milk
  • 2 tablespoons light butter
  • 2 teaspoons fresh tarragon leaves
  • 2 teaspoons fresh parsley
  • 2 teaspoons chives

Instructions

  1. Heat 1 ½ teaspoons of oil in a large pot over medium heat and cook the chicken until browned, then set aside.
  2. Add remaining oil and sauté onions, carrots, and leeks until softened.
  3. Stir in flour, then add wine, broth, milk, thyme, and bay leaf. Shred chicken and return it to the pot.
  4. Simmer the mixture for 30 minutes, then add tarragon, salt, and pepper.
  5. For the dumplings, mix the dry ingredients in one bowl and combine milk and melted butter in another.
  6. Combine the wet and dry ingredients, then drop spoonfuls of the dumpling mixture into the stew.
  7. Cover and cook the dumplings on low heat for 15-18 minutes until they puff up.
