Healthy Vegan Cauliflower Soup

Ingredients

The soup

  • 1 cup chopped sweet or yellow onion
  • ½ - 1 teaspoon sea salt
  • 3 cloves garlic
  • 1 head cauliflower (about 2 pounds)
  • 4 cups broth (low sodium if needed)
  • 1 cup raw cashews
  • ½ cup cooked potato
  • ½ cup cooked white beans (drained and rinsed)
  • 1 tablespoon lemon juice

Optional toppings

  • to taste parsley
  • to taste thyme
  • to taste vegan parmesan
  • to taste ground black pepper
  • to taste saved browned cauliflower

Instructions

  1. Sauté the onions and salt with oil or broth until soft for about 5 minutes.
  2. Add the garlic and sauté for 1-2 minutes.
  3. Add the cauliflower and sauté for about 6-8 minutes until browning.
  4. Cover and cook for another 5-7 minutes until the cauliflower is soft.
  5. Transfer the mixture to a blender, add the remaining ingredients, and blend until smooth.
  6. Serve hot, optionally garnished with toppings.
