Ingredients

The cake

  • 1 ¼ cup oat flour
  • ¾ cup almond flour
  • 1 cup cane sugar
  • 1 tablespoon baking powder
  • 4 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon sea salt
  • 6 tablespoons unsweetened apple sauce
  • ¼ cup cashew milk
  • 2 tablespoons apple cider vinegar
  • cups grated carrots
  • ½ cup chopped walnuts or pecans

Optional toppings

  • to taste cream cheese frosting
  • to taste vanilla frosting
  • to taste shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flours, sugar, baking powder, spices, and salt.
  3. Make a well in the center and add the apple sauce, milk, and vinegar; mix until smooth.
  4. Fold in the grated carrots and nuts if using.
  5. Pour the batter into an 8 or 9-inch cake pan.
  6. Bake for about 35 minutes, checking at 32 minutes with a toothpick for doneness.
  7. Let cool and frost or serve as is.
