Ingredients

Pie Crust

  • 1 recipe Almond flour pie crust

Lemon Filling

  • 5 large Egg yolks
  • ½ cup Hot water
  • 2 tsp Unflavored gelatin powder
  • ¼ tsp Xanthan gum
  • ¾ cup Lemon juice
  • 1 tbsp Lemon zest
  • 1 cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • 2 tbsp Unsalted butter

Meringue

  • 5 large Egg whites
  • ½ cup Besti Powdered Monk Fruit Allulose Blend

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare the almond flour pie crust.
  2. Whisk the egg yolks in a small bowl and set aside, saving the egg whites for later.
  3. In another bowl, whisk together hot water, gelatin, and xanthan gum; set aside.
  4. In a saucepan, combine lemon juice, lemon zest, Besti sweetener, salt, and egg yolks, and heat until simmering.
  5. Slowly whisk in the gelatin mixture, stirring for 2-3 minutes.
  6. Add butter and stir until melted, then remove from heat and pour into the cooled pie crust.
  7. Refrigerate the pie for at least 5-6 hours or overnight to set.
  8. Preheat the oven to Broil.
  9. Beat the egg whites until stiff peaks form, then add Besti sweetener and mix until glossy.
  10. Dollop the meringue over the lemon filling and smooth it out.
  11. Broil for 2-3 minutes until the meringue is golden brown.
  12. Cool completely and refrigerate for at least 4 hours before serving.
