Instructions
- Preheat the oven to 350°F (176°C) and prepare the almond flour pie crust.
- Whisk the egg yolks in a small bowl and set aside, saving the egg whites for later.
- In another bowl, whisk together hot water, gelatin, and xanthan gum; set aside.
- In a saucepan, combine lemon juice, lemon zest, Besti sweetener, salt, and egg yolks, and heat until simmering.
- Slowly whisk in the gelatin mixture, stirring for 2-3 minutes.
- Add butter and stir until melted, then remove from heat and pour into the cooled pie crust.
- Refrigerate the pie for at least 5-6 hours or overnight to set.
- Preheat the oven to Broil.
- Beat the egg whites until stiff peaks form, then add Besti sweetener and mix until glossy.
- Dollop the meringue over the lemon filling and smooth it out.
- Broil for 2-3 minutes until the meringue is golden brown.
- Cool completely and refrigerate for at least 4 hours before serving.
