Ingredients

The batter

  • 2 large eggs
  • 1 cup flour
  • 1 tsp baking powder
  • 1 Tbsp granulated sugar
  • tsp salt
  • 1 cup ricotta
  • 1 cup milk
  • ½ tsp vanilla extract

For cooking

  • 2 Tbsp oil

Instructions

  1. Separate the eggs into yolks and whites, then beat the yolks until smooth.
  2. Whisk together flour, baking powder, sugar, and salt in a small bowl.
  3. In a large bowl, combine ricotta, milk, beaten egg yolks, and vanilla.
  4. Gently fold the dry ingredients into the ricotta mixture.
  5. Beat the egg whites until stiff peaks form and fold them into the batter gently.
  6. Heat a medium pan over medium heat and add a little oil.
  7. Pour batter into the pan and cook until bubbles form, then flip and cook until golden.
  8. Repeat with remaining batter, adding oil as needed.
