Instructions
- Separate the eggs into yolks and whites, then beat the yolks until smooth.
- Whisk together flour, baking powder, sugar, and salt in a small bowl.
- In a large bowl, combine ricotta, milk, beaten egg yolks, and vanilla.
- Gently fold the dry ingredients into the ricotta mixture.
- Beat the egg whites until stiff peaks form and fold them into the batter gently.
- Heat a medium pan over medium heat and add a little oil.
- Pour batter into the pan and cook until bubbles form, then flip and cook until golden.
- Repeat with remaining batter, adding oil as needed.
