Instructions
- Sauté onions in olive oil until soft, about 15 minutes.
- Add fresh tomatoes, crushed tomatoes, tomato paste, garlic, basil, thyme, salt, and pepper. Bring to a boil, then simmer for 15-20 minutes until liquid is reduced.
- Preheat oven to 375°F and grease a pie plate.
- In a bowl or blender, mix warm parsnip puree, coconut cream, eggs, salt, and pepper until smooth.
- Pour the mixture into the greased pie plate, creating a slight concave shape.
- Spread the tomato sauce in the center, leaving a border of parsnip mixture.
- Arrange tomato slices decoratively on top.
- Bake for 30 minutes, then optionally garnish with sautéed shallots, garlic, and fresh basil before serving.
