Filling Ingredients

  • 3 pieces sweet onions, diced
  • ¼ cup extra-virgin olive oil
  • 2 pieces fresh tomatoes, seeded and diced
  • 1-2 pieces additional tomatoes, sliced
  • 1 jar crushed tomatoes (18.3 ounces)
  • ¼ cup tomato paste
  • 1 clove garlic, minced or crushed
  • teaspoons dried basil
  • ¼ teaspoon dried thyme
  • 1 teaspoon Celtic sea salt
  • ¾ teaspoon freshly ground pepper

Soft Custard Base

  • cups parsnip puree
  • ½ cup coconut cream
  • 3 pieces eggs
  • ¼ teaspoon Celtic sea salt
  • ¼ teaspoon freshly ground pepper

Optional Garnishes

  • as desired sautéed shallots
  • as desired sautéed garlic slices
  • as desired fresh basil

Instructions

  1. Sauté onions in olive oil until soft, about 15 minutes.
  2. Add fresh tomatoes, crushed tomatoes, tomato paste, garlic, basil, thyme, salt, and pepper. Bring to a boil, then simmer for 15-20 minutes until liquid is reduced.
  3. Preheat oven to 375°F and grease a pie plate.
  4. In a bowl or blender, mix warm parsnip puree, coconut cream, eggs, salt, and pepper until smooth.
  5. Pour the mixture into the greased pie plate, creating a slight concave shape.
  6. Spread the tomato sauce in the center, leaving a border of parsnip mixture.
  7. Arrange tomato slices decoratively on top.
  8. Bake for 30 minutes, then optionally garnish with sautéed shallots, garlic, and fresh basil before serving.
