Classic Beef Bourguignon

Instructions
- Preheat the oven to 250°F.
- Sauté mushrooms in butter until browned, then set aside.
- Sauté pearl onions until slightly browned, then set aside with mushrooms.
- Pat dry and season the beef chuck roast, then set aside.
- Cook bacon until crispy, then remove from the pan.
- Sear the beef in batches until browned, then set aside with bacon.
- Cook onions and carrots in the same pan until browned.
- Add tomato paste and garlic, cooking until fragrant.
- Return beef and bacon to the pot, add wine, broth, and thyme, then simmer.
- Cover and transfer to the oven for 1 hour and 15 minutes.
- Remove from the oven, add flour mixture, mushrooms, and pearl onions, then simmer for 15 minutes.
- Remove thyme bundle, adjust seasoning, and serve.
