Classic Beef Bourguignon

Ingredients

  • 4 strips thick cut bacon
  • 3 lb. beef chuck roast
  • 1 sweet onion sliced
  • 2 lb. carrots
  • 1 tablespoon tomato paste
  • 4 cloves garlic
  • 1 bottle red wine (cabernet sauvignon)
  • 1 cup beef bone broth
  • 10–12 sprigs fresh thyme
  • 2 tablespoons butter
  • 16 oz. baby bella mushrooms
  • 10 oz. frozen pearl onions
  • 2 tablespoons flour

Instructions

  1. Preheat the oven to 250°F.
  2. Sauté mushrooms in butter until browned, then set aside.
  3. Sauté pearl onions until slightly browned, then set aside with mushrooms.
  4. Pat dry and season the beef chuck roast, then set aside.
  5. Cook bacon until crispy, then remove from the pan.
  6. Sear the beef in batches until browned, then set aside with bacon.
  7. Cook onions and carrots in the same pan until browned.
  8. Add tomato paste and garlic, cooking until fragrant.
  9. Return beef and bacon to the pot, add wine, broth, and thyme, then simmer.
  10. Cover and transfer to the oven for 1 hour and 15 minutes.
  11. Remove from the oven, add flour mixture, mushrooms, and pearl onions, then simmer for 15 minutes.
  12. Remove thyme bundle, adjust seasoning, and serve.
