Ingredients

Main Ingredients

  • 5 pieces dried shiitake mushrooms
  • lb chicken leg, chopped into small pieces
  • 5 oz roasted chestnuts, peeled
  • 1 tablespoon olive oil
  • 2 tablespoons ginger, peeled and cut into thin strips
  • 2 stalks scallion, cut into 1 inch length
  • 3 cups water

Brown Sauce Ingredients

  • 3 tablespoons soy sauce
  • 3 tablespoons Chinese Shaoxing wine
  • 1 tablespoon sugar

Instructions

  1. Soak the dried shiitake mushrooms in 3 cups of warm water for 30 minutes until softened.
  2. Drain the mushrooms but keep the soaking water for cooking.
  3. Heat olive oil in a pan over medium heat and stir-fry ginger and scallions until aromatic.
  4. Add the chicken pieces and stir-fry until the meat turns white.
  5. Add the soaked mushrooms, roasted chestnuts, soy sauce, Chinese Shaoxing wine, and sugar, and stir to combine.
  6. Pour in the mushroom-soaked water and bring to a boil.
  7. Reduce the heat and let it simmer for 15 to 20 minutes until the sauce thickens.
  8. Serve immediately with hot white rice.
