Instructions
- Soak the dried shiitake mushrooms in 3 cups of warm water for 30 minutes until softened.
- Drain the mushrooms but keep the soaking water for cooking.
- Heat olive oil in a pan over medium heat and stir-fry ginger and scallions until aromatic.
- Add the chicken pieces and stir-fry until the meat turns white.
- Add the soaked mushrooms, roasted chestnuts, soy sauce, Chinese Shaoxing wine, and sugar, and stir to combine.
- Pour in the mushroom-soaked water and bring to a boil.
- Reduce the heat and let it simmer for 15 to 20 minutes until the sauce thickens.
- Serve immediately with hot white rice.
