Triple Layer Vegan Blueberry Cheesecake Bars

Instructions
- Blend the granola with melted coconut oil in a food processor until crumbly.
- Press the mixture into a brownie pan and freeze it.
- Blend the cheesecake ingredients until smooth and pour over the crust, then freeze again.
- Heat blueberries in a saucepan, smash them, and mix in chia seeds and maple syrup.
- Let the jam sit for 15 minutes to gel, then add it on top of the cheesecake layer.
- Refrigerate for at least 1 hour before serving.
