Triple Layer Vegan Blueberry Cheesecake Bars

Ingredients

Crust

  • 1 bag grainless granola
  • ¼ cup melted coconut oil

Cheesecake

  • cups raw cashews, soaked
  • ½ cup filtered water
  • 3 Tbsp maple syrup
  • 1 tsp vanilla
  • 1 pinch salt

Blueberry Jam

  • ½ cup fresh blueberries
  • 1 Tbsp chia seeds
  • 1 Tbsp maple syrup

Instructions

  1. Blend the granola with melted coconut oil in a food processor until crumbly.
  2. Press the mixture into a brownie pan and freeze it.
  3. Blend the cheesecake ingredients until smooth and pour over the crust, then freeze again.
  4. Heat blueberries in a saucepan, smash them, and mix in chia seeds and maple syrup.
  5. Let the jam sit for 15 minutes to gel, then add it on top of the cheesecake layer.
  6. Refrigerate for at least 1 hour before serving.
