Chocolate Chip Coconut Pancakes

Ingredients

The batter

  • 5 units eggs
  • ½ cup quinoa flakes or almond meal flour
  • ¼ cup arrowroot flour
  • ½ cup coconut flour
  • 2 tsp vanilla extract
  • ½ tsp sea salt
  • 2 tbsp coconut sugar
  • 2 tbsp ghee or coconut oil
  • 1 cup cashew milk
  • 10 drops vanilla liquid stevia (optional)

For cooking

  • as needed tbsp coconut oil (for greasing)
  • as needed units dairy-free chocolate chips

Instructions

  1. Blend all the batter ingredients until smooth.
  2. Adjust the batter thickness with extra quinoa or almond flour if needed.
  3. Preheat a large skillet over medium heat and grease it with coconut oil.
  4. Pour about 3 pancakes (4 inches each) into the skillet.
  5. Spread the batter slightly and add chocolate chips on top.
  6. Cook until ready, then flip and cook briefly on the other side.
