Instructions
- Preheat the Blackstone griddle to medium heat (about 350 degrees F) and oil it.
- Place the zucchini and sweet peppers on one side of the griddle.
- Arrange the tortellini on the other side, ensuring they can be covered.
- Add water to the griddle and cover the pasta with a dome or lid.
- Cook for 4 minutes, then stir the vegetables and the pasta.
- Cook for an additional 2 to 4 minutes until the pasta is lightly browned and the vegetables are tender.
- Transfer everything to a bowl and toss with Italian dressing and mozzarella.
- Garnish with fresh basil and Parmesan cheese.
