Ingredients

The vegetables

  • 2 medium zucchini
  • 8 ounces sweet mini peppers

The pasta

  • 22 ounces refrigerated or thawed tortellini

The dressing and cheese

  • ½ cup Italian dressing
  • 4 ounces mozzarella pearls

For serving

  • to taste fresh basil leaves
  • to taste Parmesan cheese

Instructions

  1. Preheat the Blackstone griddle to medium heat (about 350 degrees F) and oil it.
  2. Place the zucchini and sweet peppers on one side of the griddle.
  3. Arrange the tortellini on the other side, ensuring they can be covered.
  4. Add water to the griddle and cover the pasta with a dome or lid.
  5. Cook for 4 minutes, then stir the vegetables and the pasta.
  6. Cook for an additional 2 to 4 minutes until the pasta is lightly browned and the vegetables are tender.
  7. Transfer everything to a bowl and toss with Italian dressing and mozzarella.
  8. Garnish with fresh basil and Parmesan cheese.
