Ingredients

The soup base

  • 1 tablespoon olive oil
  • 1 14-ounce smoked sausage, chopped into ½-inch pieces
  • ½ cup finely diced onion
  • 3 cloves garlic, minced or pressed
  • 4 cups chicken broth
  • cups russet potatoes, peeled and diced medium
  • 2 ribs celery, diced small

The thickening agents

  • 5 tablespoons butter
  • ¼ cup all-purpose flour

The cheese sauce

  • 2 cups milk
  • 6 ounces shredded cheddar cheese

Seasoning

  • ¼ teaspoon black pepper
  • to taste salt
  • optional sour cream for topping

Instructions

  1. Heat olive oil in a large pot and lightly brown the diced sausage, then set aside.
  2. Sauté onions in the same pot until translucent, then add garlic and cook until golden.
  3. Add potatoes, celery, and chicken broth, bring to a simmer, and cook until potatoes are soft.
  4. Roughly smash half of the potatoes in the pot for a thicker texture.
  5. In a separate pot, melt butter, add flour, and cook until lightly golden.
  6. Slowly whisk in milk until thickened, then add cheese gradually off the heat until melted.
  7. Stir the cheese sauce into the soup, season with salt and pepper, and return the sausage to the pot.
  8. Serve hot, topped with sour cream and extra cheese if desired.
