Cheesy Sausage Potato Soup

Instructions
- Heat olive oil in a large pot and lightly brown the diced sausage, then set aside.
- Sauté onions in the same pot until translucent, then add garlic and cook until golden.
- Add potatoes, celery, and chicken broth, bring to a simmer, and cook until potatoes are soft.
- Roughly smash half of the potatoes in the pot for a thicker texture.
- In a separate pot, melt butter, add flour, and cook until lightly golden.
- Slowly whisk in milk until thickened, then add cheese gradually off the heat until melted.
- Stir the cheese sauce into the soup, season with salt and pepper, and return the sausage to the pot.
- Serve hot, topped with sour cream and extra cheese if desired.
