Paleo Chicken Alfredo

Ingredients

Dairy Free Alfredo Sauce

  • 1 ½ cups raw cashews
  • ¾-1 cup water or unsweetened almond milk
  • 2 cloves garlic
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons nutritional yeast
  • 1 ½ teaspoons salt
  • 1 teaspoon dried basil

Paleo Chicken Alfredo

  • 2 medium chicken breasts
  • 1 tablespoon avocado oil or olive oil
  • 28 ounces cooked spaghetti squash
  • to taste salt and freshly cracked black pepper
  • to taste fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper, then heat oil in a skillet and cook chicken for 8-10 minutes, flipping halfway.
  2. Remove chicken from skillet and let it rest for 5 minutes before slicing.
  3. In a blender, combine all alfredo sauce ingredients and blend until smooth. Heat if necessary.
  4. Warm the cooked spaghetti squash and top with alfredo sauce and sliced chicken.
  5. Garnish with parsley and additional black pepper.
