Ingredients

The lemons

  • 4 large lemons
  • 1 Juice of lemon

The brine

  • 2 tbsp Himalayan salt
  • ½ - ¾ cup boiled + cooled water

The herbs

  • ¼ cup fresh basil

Instructions

  1. Boil the water and let it cool.
  2. Slice the lemons into circles and place them in a bowl.
  3. Layer the lemons in a jar, adding salt between each layer.
  4. Add the basil throughout the jar.
  5. Pour in the lemon juice and press down the layers.
  6. Add enough sterilized water to fill the jar.
  7. Seal the jar and let it sit at room temperature for 3 days.
  8. Transfer to the fridge for 2-3 weeks before using.
  9. Shake the jar occasionally to keep lemons submerged.
