Golden French Lentil Soup

Ingredients

  • ½ cup raw cashews
  • 2 cups water
  • 2 tbsp extra-virgin olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 to 1 ½ tsp fine sea salt
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 tsp ground cumin
  • 1 ½ tsp dried thyme
  • 1 tsp ground turmeric
  • 1 14-oz can diced tomatoes, with juices
  • ¾ cup uncooked French green lentils
  • 4 cups low-sodium vegetable broth
  • 3 cups Swiss chard or kale leaves, chopped
  • 1 to 2 tsp white wine vinegar

Instructions

  1. Soak the cashews in water for 1 to 2 hours or overnight, then drain and rinse.
  2. Blend the cashews with ½ cup of water until smooth and creamy, and set aside.
  3. In a large pot, heat olive oil and sauté onion, garlic, and a pinch of salt until softened.
  4. Add diced carrots and celery, cooking for a few more minutes.
  5. Stir in cumin, thyme, and turmeric, mixing well.
  6. Add diced tomatoes, lentils, broth, and remaining water, bringing to a boil.
  7. Reduce heat and simmer uncovered for 30 to 35 minutes until lentils are tender.
  8. Stir in the cashew cream and chopped greens, seasoning with salt, pepper, and vinegar to taste.
  9. Cook for a couple more minutes until greens are wilted, then serve.
