Instructions
- Smoke the pineapple slices at 250°F for 30-45 minutes, then refrigerate.
- Preheat the oven to 350°F.
- Melt butter in the cast iron skillet, coating the bottom and sides.
- Sprinkle brown sugar over the melted butter and arrange smoked pineapple slices on top.
- Place maraschino cherries in the pineapple slices.
- Beat softened butter and sugar until creamy, then add eggs and vanilla.
- In a separate bowl, whisk flour, baking powder, and salt, then combine with the butter mixture and milk.
- Pour the batter into the skillet and bake for 30 minutes.
- Cover with foil and bake for an additional 10-15 minutes until a toothpick comes out clean.
- Cool for 15 minutes before inverting onto a plate.
