Ingredients

The cake base

  • ½ cup butter
  • ¾ cup smoked or regular sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • cups all purpose flour
  • tsp baking powder
  • ¼ tsp salt
  • ½ cup milk

The topping

  • 10 slices smoked pineapple
  • ¼ cup butter
  • ½ cup brown sugar
  • 1 jar maraschino cherries

Equipment

  • 1 10-inch cast iron skillet

Instructions

  1. Smoke the pineapple slices at 250°F for 30-45 minutes, then refrigerate.
  2. Preheat the oven to 350°F.
  3. Melt butter in the cast iron skillet, coating the bottom and sides.
  4. Sprinkle brown sugar over the melted butter and arrange smoked pineapple slices on top.
  5. Place maraschino cherries in the pineapple slices.
  6. Beat softened butter and sugar until creamy, then add eggs and vanilla.
  7. In a separate bowl, whisk flour, baking powder, and salt, then combine with the butter mixture and milk.
  8. Pour the batter into the skillet and bake for 30 minutes.
  9. Cover with foil and bake for an additional 10-15 minutes until a toothpick comes out clean.
  10. Cool for 15 minutes before inverting onto a plate.
