Sweet Potato and Black Bean Quinoa Bake

black beans, drained and rinsed

uncooked quinoa, rinsed

frozen corn, thawed

green onions, chopped
Instructions
- Preheat the oven to 375°F.
- Combine all ingredients except for the green onions in a 9x13 baking dish sprayed with cooking spray.
- Cover the dish with tin foil and bake for 45 minutes.
- Remove the tin foil and continue baking for an additional 15 to 20 minutes until the liquid is mostly absorbed and the potatoes are tender.
- Remove from the oven and let the casserole sit for 5 minutes to absorb any remaining liquid.
- Sprinkle with green onions before serving.
