Ingredients

The pasta

  • 1 12-ounce package linguine

The sauce

  • ¼ cup olive oil
  • 4 cloves garlic
  • 3 8-ounce cans minced clams
  • 1 cup dry white wine
  • 1 teaspoon salt
  • ½ cup chopped parsley
  • to taste crushed red pepper flakes

Instructions

  1. 1. Fill a large pot with salted water and cook the linguine until al dente, then drain and set aside.
  2. 2. In a large skillet over medium-high heat, warm the olive oil until hot.
  3. 3. Add the minced garlic and sauté until fragrant.
  4. 4. Stir in the reserved clam liquid, white wine, and salt, then bring to a boil.
  5. 5. Reduce the heat to medium and let the sauce reduce for about 10 minutes.
  6. 6. Add the minced clams and chopped parsley, stirring until heated through.
  7. 7. Lower the heat and add the cooked linguine, tossing until the pasta absorbs some sauce.
  8. 8. Plate the pasta and clam sauce, garnish with additional parsley and red pepper flakes if desired, and serve immediately.
