Simple Butternut Squash Tart

Instructions
- Preheat the oven to 375°F.
- Thaw and roll out the puff pastry to about 1/8-inch thickness.
- Place the pastry in a tart pan, leaving some overhang, and prick the base with a fork.
- Mix the ricotta, egg, caramelized onions, and salt in a bowl and spread it over the pastry base.
- Arrange the butternut squash slices on top of the ricotta mixture, followed by the goat cheese slices.
- Fold the edges of the pastry over the filling and brush with egg yolk.
- Bake for 30-35 minutes until the pastry is golden and the filling is set.
- Serve warm, cut into small slices, and sprinkle with remaining lemon zest and pepper.
