Simple Butternut Squash Tart

Ingredients

The tart base

  • 1 package puff pastry dough

The filling

  • 1 cup ricotta cheese
  • 1 whole egg
  • 1 whole egg yolk
  • ½ cup caramelized onions
  • 1/4 teaspoon sea salt
  • 10 slices butternut squash
  • 6-10 slices goat cheese
  • 1 teaspoon pepper
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 375°F.
  2. Thaw and roll out the puff pastry to about 1/8-inch thickness.
  3. Place the pastry in a tart pan, leaving some overhang, and prick the base with a fork.
  4. Mix the ricotta, egg, caramelized onions, and salt in a bowl and spread it over the pastry base.
  5. Arrange the butternut squash slices on top of the ricotta mixture, followed by the goat cheese slices.
  6. Fold the edges of the pastry over the filling and brush with egg yolk.
  7. Bake for 30-35 minutes until the pastry is golden and the filling is set.
  8. Serve warm, cut into small slices, and sprinkle with remaining lemon zest and pepper.
