Ingredients

The batter

  • cups brown rice flour
  • ½ teaspoon fine grain sea salt
  • 2 tablespoons toasted sesame seeds
  • ½ cup full-fat coconut milk
  • 1 cup water
  • 6 large eggs
  • cup minced chives

For cooking

  • 1 teaspoon extra-virgin coconut oil

Instructions

  1. Combine the rice flour, salt, and sesame seeds in a large mixing bowl.
  2. In a separate bowl, whisk together the coconut milk, water, eggs, and chives.
  3. Pour the wet mixture over the dry ingredients and stir until combined and lump-free.
  4. Let the batter sit for 5 minutes, then adjust the consistency with more water if needed.
  5. Heat a skillet over medium heat and melt the coconut oil.
  6. Pour a scant ¼ cup of batter into the skillet, rotating to cover the bottom.
  7. Cook until golden and the edges curl, then flip to brown the other side.
  8. Cover with a tea towel while cooking the remaining pancakes.
