Instructions
- Whisk together all the dressing ingredients in a mixing bowl and season with salt and pepper.
- Divide the spinach among 4 plates.
- Top each plate with chicken, avocado, sun dried tomatoes, feta, and pine nuts.
- Stir the dressing and pour it evenly over each serving.
- Serve immediately.
