Southwest Stuffed Spaghetti Squash

Instructions
- Preheat the oven to 400ºF and cut the spaghetti squash in half lengthwise, scooping out the seeds.
- Place the squash cut-side down on a baking sheet and bake for 45 to 60 minutes until tender.
- In a bowl, combine drained tomatoes, black beans, cumin, garlic powder, and chopped green onions.
- Scrape the squash strands into the bowl and mix with the other ingredients, seasoning with salt.
- Scoop the mixture back into the squash shells and sprinkle with cheese.
- Bake at 400ºF for 20 minutes until the cheese is bubbly and the filling is hot.
- Let cool briefly before serving and add any desired toppings.
