Ingredients

The squash

  • 1 whole spaghetti squash

The filling

  • 1 14.5 oz can diced tomatoes with green chilies
  • 1 15 oz can black beans
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 2 whole green onions
  • 1 ½ teaspoons fine sea salt
  • ¾ cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400ºF and cut the spaghetti squash in half lengthwise, scooping out the seeds.
  2. Place the squash cut-side down on a baking sheet and bake for 45 to 60 minutes until tender.
  3. In a bowl, combine drained tomatoes, black beans, cumin, garlic powder, and chopped green onions.
  4. Scrape the squash strands into the bowl and mix with the other ingredients, seasoning with salt.
  5. Scoop the mixture back into the squash shells and sprinkle with cheese.
  6. Bake at 400ºF for 20 minutes until the cheese is bubbly and the filling is hot.
  7. Let cool briefly before serving and add any desired toppings.
