Instructions
- Combine rice, salsa, chicken, black beans (drained), chili powder, and chicken broth in a large skillet.
- Stir the mixture until evenly combined.
- Cover the skillet with a lid and heat on high until it boils.
- Once boiling, reduce the heat to low and simmer for 15 minutes.
- After 15 minutes, turn off the heat and let it rest with the lid on for 5 minutes.
- Remove the lid and fluff the mixture with a fork.
- Sprinkle shredded cheese on top, cover, and let it sit until the cheese melts.
- Sprinkle sliced green onions over the melted cheese and serve hot.
