Ingredients

  • 1 cup uncooked long grain white rice
  • 1 cup salsa
  • 1.5-2 cups precooked shredded chicken
  • 1 15 oz can black beans
  • 1 Tbsp chili powder
  • cups chicken broth
  • 1 cup shredded cheese
  • 2-3 pieces green onions, sliced

Instructions

  1. Combine rice, salsa, chicken, black beans (drained), chili powder, and chicken broth in a large skillet.
  2. Stir the mixture until evenly combined.
  3. Cover the skillet with a lid and heat on high until it boils.
  4. Once boiling, reduce the heat to low and simmer for 15 minutes.
  5. After 15 minutes, turn off the heat and let it rest with the lid on for 5 minutes.
  6. Remove the lid and fluff the mixture with a fork.
  7. Sprinkle shredded cheese on top, cover, and let it sit until the cheese melts.
  8. Sprinkle sliced green onions over the melted cheese and serve hot.
