Shabu Shabu Cold Noodle Salad

Ingredients

The salad

  • 250 g Udon Noodle
  • 1 cup green salad leaves
  • 100 g pork thinly sliced
  • ½ tbsp sake
  • 1 tsp salt
  • ½ unit tomato
  • ½ unit cucumber
  • 1 tsp white sesame seeds

The dressing

  • 1 tbsp white sesame seeds paste
  • 1 tbsp sake
  • 1 tbsp mirin
  • ½ tbsp soy sauce
  • 1 cup dashi
  • 1 tbsp rice vinegar
  • 1 tsp Shiro dashi

Instructions

  1. Prepare the goma dressing by grinding white sesame seeds paste with sake, mirin, soy sauce, and dashi, then refrigerate.
  2. Boil water in a pot, add sake and salt, then dip the thinly sliced pork until it changes color.
  3. Wash the green salad leaves and drain well.
  4. Slice the tomato and cucumber.
  5. Cook the udon noodles according to package instructions, then rinse under cold water.
  6. Assemble by placing udon noodles on plates, topping with salad leaves, tomato, cucumber, and pork, then drizzle with dressing.
